Garden to Glass: How Hotels Are Using Fresh Herbs to Rethink Spring Cocktails

As winter gives way to longer evenings and open-air dining, cocktails and mocktails naturally shift with the season. Rich, spirit-forward pours make room for drinks that feel brighter, fresher and more aromatic. Increasingly, that transformation starts not behind the bar—but in the garden.

Across hotel lounges and resort bars, mixologists are turning to fresh herbs to define their spring menus. Rosemary adds structure and depth, mint delivers lift and aroma, and basil brings citrus-friendly brightness. Used thoughtfully, these ingredients do far more than garnish a glass — they shape balance, texture and the entire sensory experience of a drink.

Rosemary: Structure and Restraint

At Willows Lodge, 30 minutes outside of Seattle, rosemary isn’t decorative—it’s foundational.

For its “Cupid’s Garden” cocktail at the Fireside Lounge, mixologist Negar Taghizadeh set out to pair bright spring flavors with something grounding. Strawberry and lemon provide freshness and acidity, while rosemary creates what she calls “structure and an aromatic backbone.” Gin bridges the fruit and herb, echoing its botanical notes.

“Rosemary is perfect for spring because it’s fresh and green, but also grounding,” Taghizadeh explains. “It complements fruit and citrus without overpowering them.”

Precision is what elevates the drink. Rather than muddling a sprig directly into the shaker, Taghizadeh incorporates rosemary in two controlled forms: a briefly steeped strawberry-rosemary syrup and a concentrated tincture added drop by drop. The approach allows her to fine-tune aroma and intensity without muddying the cocktail’s color or releasing woody bitterness.

“The biggest mistake is overdoing it,” she says. Herbs are potent, and restraint ensures rosemary enhances rather than dominates. In spring cocktails, that balance is everything.

Mint: Aroma and Accessibility

At Mountain Shadows Resort in Paradise Valley (a suburb of Phoenix), mint takes the lead in a zero-proof offering that feels just as intentional as its spirited counterparts.

The Cucumber Mint Joy, served at Hearth ’61, combines Seedlip Garden 108, lime and cucumber for a drink built around freshness. “Mint amplifies the olfactory response in such a positive way,” says the resort’s food and beverage manager Jim Gallen. “It’s an aromatic vehicle for joy.”

Used correctly, mint lifts a cocktail before the first sip. Used incorrectly, it overwhelms. Gallen notes that home bartenders often muddle too aggressively or add too much, turning a refreshing element into a dominant one. In this mocktail, mint is present but controlled—enhancing citrus and cucumber rather than competing with them.

The result is clean, crisp and unmistakably seasonal—proof that garden-to-glass thinking applies just as much to alcohol-free drinks as it does to classic cocktails.

Basil: Brightness and Lift

Basil may be best known for summer, but its citrus-friendly personality makes it equally compelling in spring.

At Hammock Beach Golf Resort & Spa in Palm Coast, FL, the Basil Smash Martini pairs vodka, lemon juice and simple syrup with fresh basil leaves shaken vigorously to extract color and aroma. Woody Mitchell, the resort’s food and beverage director, notes that infusing herbal elements into a beverage program brings a fresh aroma and an unexpected dimension, adding that using herbs at peak season is just as important as selecting quality spirits. Shaken hard and double strained, the drink emerges vibrant and polished rather than murky.

Meanwhile at Vero Beach Florida’s Costa d’Este Beach Resort & Spa, basil takes a lighter, effervescent turn in the Garden Spritz. “The inspiration was spring on the coast,” says Nicole Biggles, bartender at The Wave Kitchen & Bar and cocktail creator. “Basil mirrors the season—bright, green and aromatic.” Paired with vodka, Limoncello and a splash of champagne, the herb amplifies citrus while softening sweetness.

Technique matters here, too. The team recommends gently clapping basil between your hands to release its oils rather than aggressively muddling it, which can create bitterness. “Herbs should lift a cocktail, not overpower it,” Biggles says.

Two interpretations, one takeaway: basil doesn’t just add flavor—it adds energy.

The Garden as Bar Cart

Whether layered into syrup, shaken for vibrancy, or gently pressed to release aroma, fresh herbs are redefining what spring cocktails can be. They add structure without heaviness, brightness without excess sweetness, and aroma that lingers beyond the first sip.

This season, the most compelling drinks may not begin with a rare spirit or elaborate technique—but with a handful of something green, fresh and thoughtfully used.
